Apricot Cake
Nutritious ManiChef Apricots & Walnuts combined with fresh milk in a delicious cake that is great for kids! This cake looks really impressive but you would be surprised at how easy it is to make and it tastes good too!
Ingredients
1/2 cup ManiChef Almonds
1/4 cup ManiChef Walnuts
1/2 cup ManiChef Apricots
1 1/4 cups all-purpose flour
1 teaspoon baking powder
170g slightly salted butter
1/2 cup raw white sugar
1/2 cup brown sugar
1/3 cup fresh milk
4 eggs
1/4 teaspoon almond extract
Method
Preheat the oven to 350 degrees F. Butter and flour an 8-inch round cake tin.
Lightly toast the ManiChef Almonds and Walnuts in the oven for a few minutes and leave to cool. In the meanwhile, melt some butter in a pan on low heat. Sift the flour together with the baking powder and keep aside.
In a large bowl, beat the eggs and sugar until the consistency of the batter becomes thick. Add the butter, fresh milk and almond extract to the batter followed by the chopped Mani Chef Apricots. Stir gently. Grind the toasted nuts together in a food processor and then add to the cake batter. Fold the sifted flour into the batter and keep aside.
Pour the prepared batter into the prepared cake pan. Decorate the top of the cake with slivered almonds. Bake for about 50 minutes or until done. Leave the cake to cool within the pan, on a wire rack.
